Histamine Intolerant Beef Broth Instant Pot
a low histamine alternative to traditional bone broth and beef bouillon.
2 lbs beef bones (I used beef shank) organic if you can find it
1 tbsp extra light tasting olive oil
2 carrots cut into chunks
2 celery sticks cut into chunks
1 white onion, cut in half
1 tbsp minced garlic (optional, omit for level 0 histamine)
2 bay leaves
1 tsp salt
1 tsp onion powder
1 tsp garlic powder (optional, omit for level 0 histamine)
½ tsp paprika
herbs like rosemary, basil, oregano, thyme to taste (optional)
water to fill instant pot
Histamine level: 0
rated a 1 if you add garlic.

Wash veggies then cut them into chunks.

Turn instant pot onto sautee mode (for my instant pot I just push the meat button). Pour olive oil into the pot, then add the beef shank with bone, and brown on both sides (about 10 minutes).

Add all other ingredients to the pot. Then fill the pot with water until it reaches the max fill line.

Put the lid on, set the steam release knob to seal, and set the instant pot to Soup for 60 minutes.

When the 60 minutes is up, allow the cooker to sit for 15 minutes for it to slowly release pressure. After 15 minutes, turn the steam release knob to open to release the rest of the pressure (don't burn yourself on the steam).

Strain the beef broth into a large bowl or pot. Freeze in serving size portions. I like to freeze mine in 2 cup, 1 cup, 1/2 cup, & 1/4 cup servings.
Reheat in the microwave for 2-3 minutes or on a pan on the stove.
Using an instant pot makes it possible to immensely shorten the cooking time on bone broth, which helps keep it low histamine.
I started using this as an alternative to beef stock or broth that's called for in many recipes. Most beef bouillon or broth that's available at the store is not low histamine because it contains yeast extract and/or high histamine spices like pepper.
The first time I made this I didn't add any herbs and it tasted kind of bland. The good news is, I like to use it in stew, soup, or sauces, so I just add extra seasonings then. If you want to drink it by itself, then I would add the herbs.
